Homemade Muffin Mix

Description

Ahhhh,  this muffin mix is 10x better than any store bought mix. And oh and yeah, you know what is in it. I do not like most “mixes” of any sort because they usually have lots of stuff in them that I do not want to put in my body. I am a chronic headache sufferer and the preservatives and enhancers that are used in processed food can trigger a migraine.  So long story short I like to make things home made as much as possible.

This recipe is for a basic plain muffin, but you can add a few ingredients to make just about any muffin you can think of, I have few listed below. Use your imagination and what you have in your cupboards.


Ingredients

Scale

1 gallon flour (16 cups)

6 cups sugar

6 tablespoons baking powder

3 teaspoons salt


Instructions

  1. Mix ingredients thoroughly using a wire whisk. 
  2. Store in air-tight container for later use. 

Making Muffins Using the mix

2¾ cups House-Made Muffin Mix  

1 egg 

1 cup milk 

½ cup melted butter

Mix with a large spoon until all ingredients are combined.

Portion into prepared muffin tins.

Bake at 350 degrees for 10-12 minutes

Notes

Blueberry Muffins
1. When finished mixing, fold in 1 cup fresh blueberries.
2. If using frozen or canned blueberries, rinse, drain, and dry
berries on a clean towel. When folding into the batter, use
a rubber spatula and only mix until incorporated to avoid
muffins taking on a green color.
Banana and Chocolate Chip Muffins
Add a mashed banana to bowl before mixing. When
finished mixing fold in 1⁄2 cup chocolate chips.
Cranberry Orange Muffins
1. When finished mixing, fold in 3⁄4 cup dried cranberries and
11⁄2 tablespoons orange zest.
2. Plump the cranberries by soaking in hot water and drain
before adding to batter.
Chocolate Chip Muffins
Fold in 3⁄4 cup chocolate chips when finished mixing.
Bacon Cheddar Muffins
Add 11⁄2 teaspoons granulated garlic and 1 teaspoon
onion powder to the dry ingredients before mixing. After
mixing, fold in 1 cup shredded cheddar cheese and 1⁄2 cup
crumbled bacon.
