Description

These muffi ns are moist and freeze well. If you do not have
buttermilk you can always add 1 tablespoon of white vinegar to
a cup of milk to get a similar result. Folding in chocolate chips
and/or chopped nuts after mixing will make then even better.


Ingredients

1/2 cup butter, softened
1 cup sugar
2 eggs
2 large ripe bananas, mashed (about 1 cup)
1 teaspoon vanilla extract
2 cups all-purpose fl our
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk


Instructions

1. In a bowl, cream butter and sugar. Add eggs, mix well. Add
bananas and vanilla. Combine the dry ingredients, add to
creamed mixture alternately with buttermilk.
2. Fill muffin cups ⅔ full.
3. Bake at 400°F for 16-20 minutes
